Ingredients
Almond flour – 1 cup
Coconut flour – ½ cup
Egg – 1
Salt – as per taste
Xanthan Gum – 1 teaspoon
Baking powder – a pinch will be enough
Water – as per your desired consistency
Add all these ingredients to an electric blender and mix well. Then wrap them in a food wrapping sheet and chill for 10 to 15 min. After 10 to 15 min, unwrap and divide it into small doughs. Keep moving and roll until you get the desired circular shape and size. Then put the almond flour tortilla onto the griddle and keep on pressing the corners. Here you go! Warm tortillas are ready!
If the dough is too wet to roll out properly, add more coconut flour by pinching and kneading it into your mixture. You may find that it’s easier than removing excess moisture from the food processor bowl so go slowly when adding water!
The durability of this dough is really impressive. You’ll be amazed at how thin you can roll the paste and still move it from your rolling surface to a hot griddle without problems! You can also make almond flour tortillas chips using the same above method.Â
