This bacon and onion tart is a light but filling dish. You can have it as an appetizer or for brunch instead of traditional heavy dishes with cream sauces and buttery pastry dough! The chef Gabriel Kreutter found Tarte Flambée recipe after his mother taught him how to make tarts using leftover scraps from bread baking sessions – now you too will be able to enjoy these tasty treats at home without fuss. Thanks in part due to its quick preparation time- 45 minutes.
Ingredients

- ¼ cup crème fraîche
- ⅓ cup finely chopped white onion
- ⅛ teaspoon freshly grated nutmeg
- Freshly ground black pepper, to taste
- ⅓ cup Fromage blanc
- 1½ teaspoons baking powder
- 1½ teaspoons olive oil
- ⅞ cup all-purpose flour, plus more for dusting
- 1 teaspoon kosher salt, more to taste
- 1 large egg yolk
- 100 grams of thickly cut smoked bacon ( 2 strips), and dice about ⅔ cup of the bacon finely.
Preparation
If you have a pizza stone, place it on the middle rack of your oven and top it with a baking sheet. Heat the oven to 425 degrees Fahrenheit for about 15-20 minutes or until the dough is cooked through (depending).
In a medium bowl, combine crème fraîche and fromage blanc. Add nutmeg to taste along with ½ teaspoon salt before mixing all on low speed for 1-2 minutes until creamy smoothness has been achieved!
In a separate medium bowl, whisk to combine flour with baking powder and salt. In another small dish, incorporate olive oil before adding it to the dry ingredients of your choice – I like doing this by hand because if there are any lumps, they will be easier for me to see!
Knead the dough for 1 minute until it is uniform and elastic. Roll out to a 12-inch round on your floured surface (or use an OVEN TOOLS baking sheet), then transfer carefully into parchment-lined rimless pans or dishes if necessary so that you don’t break apart any parts while rolling!
Spread the Fromage blanc mixture evenly over the dough, leaving a ½-inch border along its edges. Sprinkle bacon and onions before sliding them off your baking sheet into an oven pan so you can cook this beautiful tart right away!
Once the top begins to brown, about 20 minutes after baking on low heat, remove from the oven and slide off the parchment paper onto the serving platter. Serve warm Tarte Flambée for best results!
