This delicious and spicy fried chicken recipe has its roots in Madras, located near Chennai. The original version of this dish is made with 65 spices, including ginger, garlic, and chilli peppers, giving it a fantastic flavour!
Ingredients
- 4 Chicken breasts; make sure you cut them into strips
- 1 1/2 tbsp cumin powder
- 1 tbsp garlic paste/powder
- 1 tbsp mustard seeds
- 1 tbsp cornflour
- 1 Egg
- 500 ml Soda
- Salt
- 4 Chillies
- 2 tbsp turmeric powder
- 5 Peppercorns
- 1 tbsp ginger paste/powder
- 1 cup of oil
- 1 tbsp Kashmiri Lal Mirch/ Red chilli powder
- 1 tbsp coriander powder
- Seven curry leaves
- 2 tbsp flour
Method
The chicken 65 method is a great way to create a fantastic tasting, crispy exterior with tenderness inside. First, you must marinate your bird in spices like ginger and garlic paste, salt, turmeric, red chilli powder, and coriander powder for 15-20 minutes before putting it into the fridge. Add one egg alongside soda flour and corn starch. Then after 30 more minute sessions, at least 60 seconds apart depending on how big they are, deep-fry them until golden brown!
